Il Carpaccio餐廳給人的第一印象是寬敞明亮、親切自然。餐廳整體仿佛一座玻璃做的日光房,天氣好時,陽光透過玻璃屋頂在桌布上照出醉人的光影,落地大窗外的翠綠是皇家夢索酒店的中心花園。那些裝飾吊燈的珍珠和貝殼預(yù)示著蔚藍(lán)的地中海元素,餐廳內(nèi)飾呈現(xiàn)西西里式的巴洛克風(fēng)格。
這是巴黎第一家獲評米其林星級的意大利餐廳,開業(yè)至今已30年之久,目前由熱情洋溢的意籍廚師Roberto Rispoli 和行政主廚Laurent André主理。餐廳選用原產(chǎn)意大利的高品質(zhì)食材和初榨橄欖油,隨季節(jié)調(diào)整菜單烹飪最新鮮的應(yīng)季菜肴,多年來積累下來的意大利各地區(qū)傳統(tǒng)家庭配方大派用場,使出品既與眾不同,又地道正宗。餐廳的名字Carpaccio即源自一款意式生牛肉菜肴,把新鮮牛肉切成薄薄的片狀,追求肉質(zhì)的鮮嫩和入口即化。一款奶油烤蘆筍,選用上好的意大利里科塔奶酪,清香淡雅。摘牌菜還有豐盛的意式海鮮魚子醬,用醬汁突出食材的本味,藝術(shù)化的擺盤注重顏色的搭配。
Il Carpaccio is a restaurant entirely dedicated to Italian fine cuisine. The first impression is spacious and bright since the whole place is like a glass house full of sunshine. Natural Light pours through the glass roof and gives the tablecloth a sweet touch, outside the French window is greens from the garden of the hotel. Lamps are decorated by pearls and shells, a hint of the Mediterranean which will contribute to the flavor in this restaurant, and the intimate dining room draws on a Sicilian baroque style.
Il Carpaccio is the first Italian restaurant in Paris ever won the Michelin-star, first opened its doors 30 years ago, now under the direction of Chef Roberto Rispoli, an enthusiastic Italian, and Executive Chef Laurent André. Drawing on Italian heritage, the chefs give a very personal interpretation of traditional family recipes from Italy's many regions, using the best and freshest Italian produce and virgin olive oil. The name of the restaurant, Carpaccio, is a classic Italian style cuisine cutting fresh raw beef into thin pieces so tender that it melts in one's mouth. The cream flavored asperge is sweet and elegant, using the best Italian ricotta cheese. Classic dishes also include the seafood caviar ditalie, fresh textures stand out from rich sauces in a colorful and artistic presentation.
