由副行政總廚Franck-Elie Laloum主理,Towers現(xiàn)代小酒館的新菜單都經(jīng)過精心雕琢,以展示國際當代美食。搜羅來自世界各地不同口味的同時,亦不忘日本出產(chǎn)的時令食品,“覬覦”其舉足輕重的成色。
The new Towers Modern Bistro at The Ritz-Carlton, Tokyo accentuates a modern, informal, yet elegant ambiance allowing guests to indulge in a casual mood while enjoying innovative cuisines and the magnificent view of Tokyo from the 45th floor. By still reflecting The Ritz-Carlton, Tokyo's signature refined dining experience, Towers Modern Bistro's new concept is much more approachable for guests looking for a leisurely dining venue for dinner on weeknights, casual brunch on the weekends or to enjoy drinks and small bites after work.
Helmed by Executive Sous Chef, Franck-Elie Laloum, the new menus in Towers Modern Bistro have been carefully crafted to showcase International modern cuisine, collecting flavors from all over the world but not forgetting the notable influence of seasonal Japanese produce.
Hinokizaka
Hinokizaka弘揚真正的傳統(tǒng)飲食精髓。從2010年開始,這家當代日本料理榮登“米其林”餐廳,亦是唯一贏得這項榮譽的酒店日式餐廳。
Hinokizaka是欣賞東京全景的最佳地方之一,供應四個方面的特色飲食,包括懷石料理、壽司、天婦羅和鐵板燒。每個區(qū)域別具一格的設計弘揚了日本料理的藝術,將現(xiàn)代東方和西方的氣氛結(jié)合得天衣無縫,無懈可擊。包房內(nèi)設私人廚師主理餐桌和一間古老的日本茶室。舉頭望,城市景觀美若花開,唇齒間,特色日本料理美食大味若淡。
壽司區(qū)的室內(nèi)設計借用日本涂漆餐桌及日本江戶桐子玻璃照明燈手法,象征現(xiàn)代與傳統(tǒng)相結(jié)合。從筑地市場精挑細選的新鮮生魚片,配合經(jīng)米醋調(diào)味的米飯 — “江戶風格”壽司的出身定位了它的錦繡身家,因而得以擁躉者眾。
天婦羅區(qū)神似現(xiàn)代化的日式茶室,墻壁上的鋼瓦頗有幾分爽利勁兒。安坐于此,醉心于天婦羅廚師細心照料帶來的喜悅。油炸蔬菜、魚和肉、天婦羅的滋味非但沒有被油炸掩蓋,反而有了不同凡響的氣勢,啖之不忘。
Hinokizaka welcomes you with the true essence of traditional, yet contemporary Japanese cuisine which is awarded the Michelin One Star for 2010, and the only Hotel Japanese restaurant to have earned this distinction.
Hinokizaka is also one of the best places to appreciate vista of Tokyo which is featured by four areas for each of Kaiseki, Sushi, Tempura and Teppanyaki. Each area has distinguishing design evoking the art of Japanese cuisine in a fine balance of modern Eastern and Western atmosphere. There is also private chef's table and an old Japanese tea house for private dining with breathtaking cityscapes serving all of those featured Japanese cuisine.
Hinokizaka‐Sushi serves you exceptional dining experience of“edomae style”of sushi, which is essentially a combination of highly selected fresh raw fish from Tsukiji market and cooked rice that is seasoned with rice vinegar. The interior of the sushi area is featured by a Japanese lacquer coated counter table and Japanese Edo‐kiriko glass illumination lamp which represent the combination of modern and tradition.
Take a seat at Hinokizaka‐Tempura, and prepare to be delighted by the special care that a Tempura Chef puts forward. Much more than your average deep‐fried vegetables, fish and meat, tempura, when done correctly, should enhance the flavor of the ingredients – not mask it – and that is what you will enjoy at Hinokizaka‐Tempura. The interior is featured modern Japanese style tea room which has some modern elements such as steel tile on the wall.
